My Panther is much like yours, including an EarthX battery. The third wheel is at the back. I left off the wing fold mechanism. My prop is a Sensenich ground adjustable (18 lb.). All that weighed in at 876 lb. on digital automobile scales. Eventually paint will add to that.
I chose 1200 lb. for gross weight, but will respect 1150 lb. for any aerobatics.
I was bit disappointed as I expected less than 850 lb. Still the performance difference should be almost insignificant with a power loading of 7.5 lb/hp at gross.
YMMV!

Aircraft weight?
I'm building my Panther using an IO-320 and LS wings and wanted to get some real world numbers on what weight people are flying at.
I'm estimating my plane will come in around 850lbs based on one LS/320 combo that I saw on barnstormers a while back. Mine will have an EarthX battery, GRT panel and AP servos, light catto prop, and painted. Does 850lbs sound reasonable?
What acro weight are folks flying at? What max non-acro flying weight?
Thanks, Keith
